Did you know Super Bowl Sunday is traditionally the busiest day of the year for pizzerias? On this one-day alone, Domino’s sells 11 million pizzas on Super Bowl Sunday. Think about the thousands of smaller chain pizzerias getting orders all game-day.

This year, Food Network has timed their Chopped season premiere "Pizza Perfect" to coincide with Game Day. World Champion Pizza Chef and new 2014 Judge on Chopped, Bruno DiFabio will lead the episode as a guest judge as cheftestants vie for the title of best pizza-centric meal. Declared the world pizza champion last year after winning the Grand Prize at Mondial de la Pizza, master pizzaiolo Bruno DiFabio has won six world championships, owns of several artisan pizzerias throughout the country and co-founded the International School of Pizza.

Homemade pizza has a taste like no other - at its best it can outdo (or at least equal) those from your local pizzeria. It's also healthier, cheaper, easier than you can imagine and the only limit when it comes to toppings is your imagination. Ideally, we would all own wood-fired ovens that are able to reach those incredibly high temperatures and cook your pizza quickly, but even with a regular conventional oven you can still make pizzas you’ll be proud to show off.

Who better to offer up tips the perfect homemade pizza you can serve your guests this Sunday than Bruno DiFabio? From an award-winning ‘Pulled Pork’ pizza through to a thin-crust, vegetarian, gluten-free, wheat-free pizza that somehow tastes likes chicken, there’s a pizza recipe for everyone on your guest list.

DiFabio’s pizza of choice for his own Super Bowl party? "I like to serve the Buffalo Chicken Pizza for Super Bowl parties. The reason obviously is because more Buffalo Wings are consumed on this day then any other day of the year, and it is also one of the busiest pizza days of the year as well,” Bruno explains. So I liken this recipe to somewhat of a deconstructed Buffalo Wing technique. It is artisanal because of the scratch sauces, and the brine that the chicken goes in really helps to build flavor. It is also filling and delicious, fun to talk about and to make."

Bruno DiFabio’s 5 tips for making the best at-home pizza:

1. Always bring dough and other ingredients up to room temperature. This helps even cooking and proper final oven spring.

2. Aged dough tastes better then fresh dough. Use pizza dough that has little black spots on it. This is oxidation which signals dough is at its optimal use for flavor.

3. Cook at 500 degrees (not broil) on lowest wrack. Using the lowest wrack is best for more even baking.

4. If using a pizza stone in a pre-heated oven; wipe surface of the hot stone with a dampened kitchen towel to offset the surface temp of the stone. This will prevent scorching.

5. After stretching dough to proper size allow the dough to rest an additional 20 minutes. This will allow your pizza to be lighter and more airy.

The Super Bowl is right around the corner, and we are already prepping our Super Bowl menus for the big day. In addition to providing classic football party foods, we also wanted to get you ready for your Super Bowl party as much as possible.

Here are 10 Super Bowl party tips and recipes that will help you prepare for—and truly enjoy—the big game.

1. Split up the food. Try to spread the food out throughout your house. Instead of just loading it all on the dining room table, put some on the kitchen counter, kitchen table, living room table or coffee table and end tables in the main TV room. Make it easy for people to snack on things as they pass instead of requiring them to load up with an entire plateful of food at a time. People are more likely to spread out their eating when there are multiple locations from which to choose.

Spread out your food onto different tables at your Super Bowl party to avoid food lines and to increase lighter snacking.

2. Multiple garbage cans. There’s nothing like an overflowing garbage can at a crowded party. Instead of keeping a single can in the kitchen, add more garbage cans throughout the populated areas of your house so that guests will always have a place to dispose of their trash. Incorporate recycling bins or bags as well to keep your party earth-friendly. The more trash and recycling receptacles you have out at your Super Bowl party, the less likely guests will “forget” to throw away their empty beer cans and plastic utensils.

3. Stagger the menu. You should have the first round of those “warm-up” appetizers ready as guests arrive. Just the small things, such as a veggie tray and perhaps shrimp cocktail. Once everyone is settled in and has a drink in hand, then you can start bringing out the next round of appetizers. Walk around the party with a tray of something warm—mozzarella sticks, pizza puffs, bagel pizzas, those sort of dishes. Once those are gone, and everyone has had a bite, relax and wait. Refill drinks, mingle and catch a few of the anticipated commercials. Then, as the second quarter starts, bring out another round of appetizers. With each new quarter, bring out another round of food, making sure to incorporate some kind of “heavy” food round, like a stew or pulled pork sandwiches, around the second or third quarter. 4. Fourth quarter desserts. If you are following the new-food-each-quarter trick, then make the fourth quarter all about the sweets. Easy foods to serve for dessert at a Super Bowl party are cookies and brownies, mini cheesecakes and personal pies. Don’t forget that you’ll need the proper utensils and dessert plates, as most people will have thrown away their forks and knives with their empty appetizer and food plates.

Save the desserts for the second half…or as the fourth quarter treat.

5. Slow cookers are your best bet. If you’re planning on serving a main dish, utilize your slow cooker—and, depending on how many people will be there, perhaps your neighbors’ slow cookers as well. This way you can start cooking your stew or chili on low heat early enough in the morning so that all of your chopping, mixing and cleaning is done well in advance of guests’ arrivals. Slow cookers allow you more time to watch the game and less time cooking while your guests are there.

6. Football-themed recipes. In all honesty, dessert is the easiest course in which to incorporate football-themed decorations. From piping a helmet onto a sugar cookie to cutting out your brownies in the shape of a football, desserts are your best bet if you want to make your Super Bowl party an all-out football event. There is a little bit of everything, from simple recipes to outrageous décor, and many of the pins are football desserts, just like this one below.

Brownies are easy to turn into footballs. Simply cut them in an oval shape and lace with melted white chocolate or white icing.

7. Put your beverages in two separate areas. If you were at a party and had to wait in line to refill your drink, it would not be the end of the world. However, it would also not be your favorite part of the evening, especially when there is something on TV that you do not want to miss. Try to stagger the locations of the drinks, such as beer in the garage fridge or out on the back porch in a cooler with the wines and mixed drinks on a table somewhere away from other potential line-creating hubs such as tables of food. You can even try to put the non-alcoholic drinks in a separate location as well, in case you have children at the Super Bowl party and you want to make sure they have constant access to juice boxes, bottles of water and soda without needing to wait at the bar for a refill.

Split up the beverages. Champagne on one table, beer in the back and cocktails and soda on a separate table.

8. TV dinner trays and extra tables. For the most part, your guests’ afternoon will revolve around the television. This is not necessarily a problem, but sometimes there are not enough convenient surface areas for all of your guests to have a place to rest their drinks or plates of food. If there are seating spots on the couch or on your extra chairs that don’t have a nearby end table, consider setting up a TV dinner tray nearby. It does not have to be large, and you should not have to go out and buy new ones because chances are your neighbors or friends will have a few you can borrow.

9. Pillows on the floor. If you have a large guest list, you will most likely need extra seating. If you do not have enough extra kitchen or dining room chairs, that is ok. Throw big, puffy pillows on the floor to encourage people to sit there and watch the game. They can be thrown against the floor near the couch so that the sitters have a back rest, or utilized as cushions to make the floor more comfortable. Not many people are opposed to sitting on the floor, especially if it means they can be closer to the TV, or to a table where they can keep their drink and food plate.

10. Coasters and place mats. Did you recently purchase a new coffee table or end table, or are they nice tables you would like to see stay in good shape? Instead of keeping a pile of coasters and placemats on the corner or in a drawer under the table, have them out and placed in the spaces you think people are likely to use. If there is a coaster on the table right where your guest wants to put his drink, he is going to use it. It is a nice way of reminding your guests to be respectful of your things without having to constantly remind them verbally.

It's Super Bowl Time! These Are the Best Snacks to Serve on Game Day

Whatever jersey you're wearing for the Super Bowl this year, you're going to need food to sustain you through the exhilarating triumph or the agonizing defeat. We're here for those of you who never miss any game, those of you who never miss a Super Bowl, and, of course, those of you who simply show up for the snacks.

This mega gallery of appetizer and snack recipes can be divided into a few basic categories. We start with Pigs in Blankets, and that's because everyone loves and expects them. Healthier Copycat Recipes to Serve Up at Your Super Bowl Party

Unless my team is playing, the Super Bowl is all about the food. I want to be able to eat and serve foods that my friends will love, but are still healthier than your typical store-bought or takeout options, which can be sky-high in calories and sodium. Cooking at home means I get to control the ingredients and sneak in vegetables when possible. Everyone still gets to enjoy classic game-day eats, like guacamole, wings, chili, pizza and dip. 5 Scrumptious Snacks for Your At-Home Super Bowl Party

W hen the big game rolls around, your team may or may not go home victorious. But serving up just the right mix of food and drink can ensure that everyone at your Super Bowl party feels like a winner.

“There are some basic rules that apply when it comes to pairings,” says the Culinary Institute of America’s Doug Miller. “One is that you don’t want the beer to outshine the food, or the food to outshine the beer.” He offers a few tips: “Beers that are crisp and refreshing — such as pilsners, light ales, and wheat beers — pair well with pizza, pasta, grilled chicken, and grilled fish. A hoppier beer, such as an IPA, is delicious with spicy cuisines such as Cajun, Mexican, and Thai food.” And while subs and sandwiches, pizza and nachos can certainly do the trick, sometimes it’s fun to shake things up a little bit. The following recipes from the CIA should really score a touchdown with your family and friends.

The following recipes can be found in the Culinary Institute of America’s Gourmet Meals in Minutes (Lebhar-Friedman, 2004).

Guacamole

Ingredients

10 avocados, halved, pitted, and peeled
6 Tbsp lime juice
1 tomato, diced (optional)
1 jalapeño, seeded and minced (optional)
1 bunch scallions, sliced
¼ cup cilantro, chopped
1 tsp Tabasco sauce, or to taste
Salt, to taste
Freshly ground black pepper, to taste

Mash avocados with a fork.

Add remaining ingredients and adjust seasoning with lime juice, salt, and spices.

Refrigerate guacamole in a tightly covered storage container. It is best to make guacamole the same day it is to be served.

Nutrition analysis (with tomato) per ounce: 35 calories, 1 g protein, 2 g carbohydrate, 31 g fat, 20 mg sodium, 0 mg cholesterol, 2 g fiber

Tapenade

Ingredients

2 cups pitted kalamata or other cured black olives
3 anchovy fillets, drained
2 Tbsp capers, rinsed
2 garlic cloves, minced
2 Tbsp lemon juice
¼ cup extra-virgin olive oil
1 Tbsp chopped parsley, rosemary, or basil

Place olives, anchovy fillets, capers, and garlic in the bowl of a food processor fitted with a steel blade. Pulse the machine on and off in short blasts until a coarse paste forms. There should still be distinct pieces of olive in the mixture.

With the machine running, drizzle in the olive oil until the paste is smooth enough to spread, though it should be slightly chunky.

Transfer the mixture to a bowl and stir in the lemon juice and fresh herbs.

Serve at room temperature. Note: Tapenade keeps for up to one week in the refrigerator.

Aïoli

Makes approximately 1 cup

Ingredients

1 cup mayonnaise
1 garlic clove, minced

Combine the mayonnaise and garlic.

Crostini

Ingredients

Slice the baguette in ¼ inch-thick rounds or cut on a bias. Place the slices on a baking sheet and toast in the oven for 5-7 minutes, or until the outside edges are golden brown.

Duck, Shrimp, and Andouille Gumbo

This dish pairs well with an Indian Pale Ale. Makes 8 servings. T he recipe is explained and illustrated in the Culinary Institute of America’s Gourmet Meals in Minutes (Lebhar-Friedman, 2004).

Ingredients

2 Tbsp butter
½ cup all-purpose flour
2 Tbsp vegetable oil
1½ onions, diced
3 celery stalks, diced
1 green bell pepper, diced
4 garlic cloves, minced
2 Tbsp tomato paste
¼ cup white wine
1 quart chicken broth
1 cup tomato puree
1 ham hock
¾ cup okra, trimmed, cut into ¼-inch slices
½ pound andouille sausage, sliced into ¼-inch pieces
2 duck breasts (preferably smoked), skinless
2 tsp salt, or to taste
1 tsp freshly ground black pepper, or to taste
½ pound shrimp, peeled and deveined
3 plum tomatoes, seeded and diced
½ tsp hot sauce

In a small saucepan, combine the butter and flour to form a roux, and cook over medium heat until dark brown, stirring frequently, about eight to 10 minutes.

While the roux is cooking, sauté the onions, celery, and bell pepper in the vegetable oil over medium to medium-high heat until golden brown, about 12–15 minutes.

Add the garlic and cook for two more minutes, or until the aroma of the garlic is noticeable. Add the tomato paste and cook to a rich red-brown color, stirring constantly, about three to four minutes. Deglaze the pan with the white wine and allow the wine to reduce by half.

Bring the chicken broth to a simmer. Whisk the roux into the hot broth, making sure there are no lumps. Add the vegetable mixture and stir well. Add the tomato purée, ham hock, and okra, and simmer for 15–20 minutes.

While the gumbo is simmering, cook the andouille in a sauté pan over medium-high heat until browned and cooked through, about four to five minutes. Remove the andouille from the pan and reserve the fat. Season the duck breasts with ½ teaspoon salt and ¼ teaspoon pepper, and sauté in the andouille fat over medium-high heat until cooked thoroughly. Once cool enough to handle, cut into medium dice.

Season the shrimp with ½ teaspoon salt and ¼ teaspoon pepper. Dry-sear the shrimp in a separate pan over high heat until cooked through, about two to three minutes. Add the shrimp, andouille, and duck to the gumbo along with the tomatoes. Continue to simmer until all the ingredients are heated through. Season with the remaining salt and pepper, and add hot sauce to taste.

2. Buffalo Chicken Dip


Ingredients


16 ounces whipped cream cheese
1/2 cup blue cheese dressing
1/2 cup Buffalo wing sauce
1/2 cup shredded mozzarella cheese
1/2 cup crumbled blue cheese
2 cups shredded rotisserie chicken
Carrot and celery sticks, for serving
Sturdy chips (pita, corn, tortilla), for serving
